It’s the best of both worlds. A fudgy and fluffy brownie combined with a chewy chocolatey cookie. Let’s just say I am in love. Simple as that.

Highly recommend to enjoy these 5 minutes. from taking them out of the oven. They are still nice and warm and oh so gooey. Pair with a glass of your favorite non-dairy milk, cozy up with a book or netflix show, and you got the ultimate comfort day.

Not to mention, these cookies are entirely gluten-free, vegan, and (almost) refined sugar-free.

These vegan and gluten-free brownie cookies are chewy, fudgy, and oh so gooey. They are the perfect combination of fluffy and fudgy like a brownie while being chewy like a cookie.

Ingredients
  • 1 flax egg (1 tbsp flax seed meal + 2 tbsp water)
  • ¼ cup melted, dark chocolate
  • 2 tbsp melted, coconut oil (cool to room temp.)
  • 1 tsp vanilla extract
  • ¼ cup non-dairy milk
  • 1 cup almond flour
  • ¼ cup coconut flour
  • ¼ cup cocoa powder
  • ½ cup coconut sugar
  • ½ tsp baking soda
  • ¼ tsp salt
  • cup dark chocolate chunks
Instructions
  1. Preheat the oven to 350 degrees. Line a baking sheet with a silicone baking mat or parchment paper.

  2. Prepare flax egg, by combining flax seed meal and water in a small bowl. Set aside for 5 min. to thicken. In a large bowl, whisk together melted dark chocolate, cooled coconut oil, vanilla, milk, and flax egg. Add flours, cocoa powder, coconut sugar, baking soda and salt. Stir until a soft dough forms. Fold in dark chocolate chunks.

  3. Use a cookie scoop to portion out dough on to the baking sheet. Slightly flat down with the palm of your hand. Bake for 12-13 min. until center is slightly firm to touch. It may seem a bit too soft, but will harden once cooled. Cool for 5 min. on baking sheet until transferring them to a wire cooling rack.

    They’re suuuper fudgy and so so delicious!! I had them with ice cream and milk, and WOWW! Also, I put 1/3 of coco sugar instead of 1/2 cup and liked them a lot!! They were gone in a day in a fam of 6 haha

    One of the best. I tried them with different kinds of flour as well, and it’s 100% compatible.
    It is also approved by a 2 year old kid, can’t beat that. 🙂
