Mini Peanut Butter Chocolate Mousse Cheesecakes

Ingredients

Crust

  • 15 Oreos
  • 3 tbsp unsalted butter, melted

Filling

  • 8 oz. full-fat cream cheese
  • â…“ cup plain greek yogurt
  • ¼ cup creamy, unsalted peanut butter
  • ¼ cup maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ tsp salt

Chocolate Mousse

  • ½ cup heavy cream, chilled
  • 2 oz. dark chocolate, melted and slightly cooled
  • 1 tbsp creamy peanut butter
  • Shaved chocolate, for topping
  • Flaky sea salt, for topping

Instructions

  • Preheat oven to 350°F. Line a muffin tin with 9 muffin liners. 
  • In a small food processor, add Oreos. Process until fine crumbs form. Add butter and pulse until well combined. Press crust into the bottom of the muffin liners. Bake for 6 minutes.
  • Meanwhile, clean out food processor. Add all filling ingredients to the food processor and process until creamy. Pour filling over baked crust. Bake cheesecakes for 15-16 minutes until just set. Cool at room temperature for 10 minutes then refrigerate for at least 2 hours.
  • Before serving, make chocolate mousse topping. Add chilled heavy cream to a large bowl (preferably metal and chilled). Use a handheld mixer to beat cream until medium peaks form. Pour in cooled melted chocolate and peanut butter. Mix on low until combined. Top each cheesecake with mousse.
  • Serve cheesecakes with shaved chocolate and flaky sea salt.
