With only 7 simple ingredients, these no-bake chocolate coconut cookies are the perfect snack or healthy dessert. They take less than 20 minutes to make and I am sure the batch will be eaten in no time.

As the days get warmer here in Seattle I am trying to find every excuse not to turn on the oven. I have a major sweet tooth, so resisting desserts isn’t possible for me. So, that is where these no-bake treats come in.
These cookies are no fail and only contain 7 simple ingredients: oats, shredded coconut, coconut oil, peanut butter, maple syrup, cocoa powder, and flaky sea salt.
They are perfectly crunchy, but oh so fudgy.

These cookies are the ultimate snack and last quite a while. Store them in the freezer in an airtight container for up to a week! They may last longer, just don’t get them freezer burned.
These cookies are also great for all ages! If you have children, the sweet chocolate flavor and creamy peanut butter will definitely win over the kids.

To make these cookies you start by melting together the coconut oil, peanut butter, and maple syrup in a small saucepan over medium heat. Whisk constantly until coconut oil has melted and it’s a smooth mixture.
Pour into a large mixing bowl. Add cocoa powder and whisk until smooth. Add oats and coconut. Use a spatula to combine until a sticky chocolatey oat batter forms.
Take a small cookie scoop, and distribute dough onto a lined baking sheet. Slightly wet your hands and form the dough into small discs/cookie shapes.
Transfer to the freezer to firm up for 15 minutes. Store in an airtight container in the fridge for softer cookies and freezer for firmer, crunchier ones.

Tips for making No-Bake Chocolate Coconut Cookies:
- Use creamy instead of chunky peanut butter. This will ease the mixing process of the batter and ensure the right texture. However, if you are a big fan of chunky, add 2 tbsp more to aid in the correct consistency.
- Any form of coconut works (coconut flakes, shredded, desiccated), but I used shredded coconut.
- You can sub coconut oil for melted vegan butter if desired.
- (Optional): add in a couple tbsp of chocolate chips!

- 2 tbsp creamy peanut butter
- 3 tbsp maple syrup
- ¼ cup cocoa powder
- 1 cup rolled oats
- ⅓ cup shredded coconut
- Pinch of flaky sea salt or 1/4 tsp table salt
