Oatmeal Trail Mix Cookies

Oatmeal Trail Mix Cookies sweetened with banana and maple syrup, made with only simple ingredients, and ready in less than 30 minutes. These cookies are the perfect tender and chewy snack.

I have made these cookies countless times since I was a college student living in the dorms. I like to also call these my “pantry” cookies, because when I first started making them I would literally just throw a bunch of random ingredients together from my pantry and call it good. I’ve never measured any of the ingredients until now.

It is made with 12 simple ingredients, requires one bowl, and only takes 25 min to make.

These are really customizable cookies, so feel free to swap out ingredients of your choosing!

  • Mashed banana -> sub for applesauce
  • Maple syrup -> honey or agave
  • Almond butter -> any type of creamy nut butter
  • Flour -> gluten-free all-purpose flour
  • Walnuts -> any type of nut (almonds, pecans, hazelnuts, etc)
  • Raisins -> chopped dates or other dried fruit
  • Chocolate -> omit if you’d like (but highly recommend to keep it)

How to make Oatmeal Trail Mix Cookies:

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large bowl, mash the banana until smooth. Whisk in maple syrup, coconut oil, almond butter, and vanilla until creamy. Add in the oats, flour, cinnamon, and salt. Use a rubber spatula or wooden spoon to fold dry ingredients into wet until a dough forms. Fold in chopped chocolate, raisins, and walnuts.
  3. Scoop cookie dough onto baking sheet using ~1.5 tbsp cookie dough scoop. Slightly press dough down with the palm of your hand. Bake cookies for 14-15 minutes until light golden brown. Cool for 5 minutes before transferring to a wire cooling rack.

  • 1 medium banana, mashed

  • 1 tsp vanilla extract
  • 1 cup (94g) old-fashioned rolled oats
  • cup (45g) all-purpose flour
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ cup (63g) dark chocolate chunks
  • cup (47g) raisins
  • cup (45g) chopped walnuts
