I have made these cookies countless times, from when I was living in the on-campus dorms last year to back at home in the summer. I like to also call these my “pantry” cookies, because when I first started making them I would literally just throw a bunch of random ingredients together from my pantry and call it good. I’ve never measured any of the ingredients until now, because I knew this recipe was worth sharing.

It is made with 10 simple ingredients, requires one bowl, and only takes 20 min. to bake.

These are really customizable cookies, so feel free to swap out ingredients of your choosing!

  • Mashed banana -> sub for applesauce
  • Maple syrup -> honey or agave
  • Almond butter -> any type of creamy nut butter
  • Gluten-free flour -> almond flour or regular all-purpose
  • Walnuts -> any type of nut (almonds, pecans, hazelnuts, etc)
  • Chocolate -> omit if you’d like (but highly recommend to keep it)
  • Pumpkin seeds -> sub for any other type of seed

Ingredients
  • 1 medium banana, mashed
  • ¼ cup maple syrup
  • ¼ cup melted coconut oil
  • 1 tbsp almond butter
  • 1 tsp vanilla extract
  • 1 cup rolled oats
  • ½ cup gluten-free all-purpose flour
  • 1 tbsp pumpkin seeds
  • cup chopped walnuts
  • cup dark chocolate chunks
Instructions
  1. Preheat oven to 350 degrees. Line a baking sheet with a silicone baking mat or parchment paper.

  2. In a large bowl, mash the banana. Stir in maple syrup, coconut oil, almond butter, and vanilla until creamy. Mix in the rest of the ingredients until combined. Using a cookie scoop, scoop even portions of dough on to the baking sheet. Slightly press down with the palm of your hand.

  3. Bake for 18-20 min. until the tops are light golden brown. Let cool for 5 min. before serving. Enjoy right away or store in an airtight container at room temp.
