Vegan Chocolate Chip Banana Bread

I need my banana bread to be extra fluffy, super moist, and studded with gooey chunks of chocolate chips. It took me a couple tries with this recipe to get the ultimate texture and perfectly balanced taste, but I think I nailed it (actually I know I did). Banana bread can sometimes be dry and lack in flavor, but this loaf is definitely not that.

A bit of ground cinnamon and nutmeg is added to this loaf to add a extra boost of warming spices and flavor which complements the dark, rich chocolate perfectly.

I haven’t tested this recipe as gluten-free, but feel free to try substituting the wheat flour for an all-purpose gluten-free blend! Let me know how it goes.

Ingredients
  • 2 large bananas, mashed (or three small)
  • cup melted coconut oil
  • ½ cup non-dairy milk
  • 1 tsp apple cider vinegar
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp coconut sugar
  • 1 cup unbleached, all-purpose flour
  • ¾ cup whole wheat flour
  • 1 tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • ¾ cup chopped, dark chocolate
Instructions
  1. Preheat the oven to 350 degrees. Line a loaf pan with parchment paper.

  2. Combine milk and vinegar in a large bowl. Let set for 5 min. to slightly curdle. Whisk in mashed banana, coconut oil, maple syrup, vanilla, and coconut sugar until combined. Add flours, baking soda, spices, and salt. Stir until almost all the flour has incorporated into the batter. Fold in the chocolate chips until combined and no visible flour remains (make sure not to overmix!).

  3. Pour batter into prepared loaf pan. Bake for 45-50 min. until a toothpick inserted comes out clean (no batter on the toothpick, chocolate is fine because that means it's gooey and delicious).

    This recipe is just amazing!! Amazingly easy and even more delicious!!
    I had some bananas overripe on the fruit bowl and this was the perfect way to use them.
    I’m so obsessed with all of Taavi’s recipes but this def was one of my favorites!
