Chocolate Chip Cookie Dough Bites

These Chocolate Chip Cookie Dough Bites are perfectly sweet and rich. They are simple and easy to make and the most addicting snack.

I think these Chocolate Chip Cookie Dough Bites were devoured in less than 48 hours; they were THAT good.

If you want some added protein in these bites, decrease almond flour to 1/2 cup, add 1/4 cup of protein powder , and add 2 more tsp of milk.

How to make Chocolate Chip Cookie Dough Bites:

  1. In a large mixing bowl, whisk together butter, sugar, milk, and vanilla until creamy. Stir in almond flour and salt until a soft cookie dough forms. Fold in mini chocolate chips.
  2. (Optional): If you want to add protein powder: add 2 tsp more non-dairy milk, reduce almond flour to ½ cup, and add ¼ cup of vanilla protein powder.
  3. Add chopped dark chocolate to a microwave-safe bowl. Melt in 20-second increments until almost melted. Whisk in the unmelted chunks (this prevents you from overheating the chocolate). Pour 1 tbsp of chocolate into the bottom of small chocolate molds*. Transfer to freezer and let set for 15 minutes.
  4. Once the chocolate has set, fill the rest of the mold with cookie dough. Freeze for an additional 10 minutes to set. Remove bites from the mold and finish with flaky sea salt.
  5. Store bites in an airtight container in the freezer for up to 2 weeks.

Ingredients
  • ¼ cup vegan butter, melted (or sub ¼ cup melted coconut oil)
  • ¼ cup packed dark brown sugar (reduce to 3 tbsp for less sweetness, if desired, I recommend no less than that)
  • 1 tbsp unsweetened, non-dairy milk
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • ¾ tsp kosher salt
  • â…“ cup mini chocolate chips
  • 5 oz. dark chocolate bar, roughly chopped
  • Flaky sea salt, for topping
