They’re perfectly chewy and crunchy. If you’re a fan of chewy granola bars then you will be the biggest fan of this recipe. The combination of rolled oats, slivered almonds, and pumpkin seeds add chew and crunch to every bite. Additionally, the creamy peanut butter work as a binder for those three ingredients which aid in the chewiness.

Contain simple ingredients. This recipe contains simple, easy-to-find ingredients that are more healthful than your average granola bar. The ingredients in this recipe can be modified, if you do not have access to them all.

Feel free to substitute:

  • Maple syrup for another liquid sweetener – honey or agave.
  • Sliced almonds for another nut of choice – chopped hazelnuts, walnuts, cashews, etc.
  • Peanut butter for another nut butter – almond, cashew, hazelnut, sunflower, etc.
  • Ground flaxseed can be omitted or substituted for ground chia seeds.

Sweet, nutty, and salty. These bars contain a balance of sweet and salty notes. The rich chocolate chunks and maple syrup are balanced with the sea salt and nut butter. In addition, the sliced almonds add a nutty note to the bars.

How to Make Chocolate Chunk Almond Granola Bars:

  1. Line an 8″ square baking dish with parchment paper.
  2. In a medium saucepan, combine the peanut butter, maple syrup, and coconut oil. Whisk over medium heat until coconut oil has completely melted. Remove from the heat and whisk in vanilla extract.
  3. Add the oats, almonds, pumpkin seeds, cinfnamon, salt, and chocolate. Use a wooden spoon or spatula to combine until a sticky, granola-like mixture forms. Press granola bar mixture into prepared baking dish, making sure its evened out on top
  4. Refrigerate granola bars for at least 1 hour. Slice and enjoy! Store in an airtight container in the fridge for up to 1 week.

Ingredients
  • ½ cup creamy peanut butter
  • cup maple syrup
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1 ½ cups rolled oats
  • ½ cup sliced almonds
  • ¼ cup pumpkin seeds (pepitas)
  • ½ tsp ground cinnamon
  • ¼ tsp sea salt
  • ¼ cup chopped dark chocolate (60-70%) or dark chocolate chips
Instructions

    can you sub anything for the rice cereal? also does peanut butter work instead of almond?

      I have not substituted anything for the rice cereal and it has a specific texture that isn’t like other grains. You could try oats but you may need more or less than the recipe? Peanut butter works just great!
