Chocolate Coconut Walnut Banana Bread

This Chocolate Coconut Walnut Banana Bread is fluffy and moist and embedded with chocolate, walnut, and coconut. Pair this with a warm cup of coffee and/or smother with a creamy nut butter.

I recently took a weekend trip with my family to Northern Idaho to go camping. I, of course, had to scout out a local coffee shop, because I am a coffee snob…what can I say. I found a super cute and cozy coffee shop called Evans Brother Coffee in Sandpoint, ID. The drinks were delicious, but what really won me over was their coconut walnut banana bread.

It was so moist, fluffy, and thick. The flavors mended so well and I loved the addition of crunchy walnuts and coconut flakes – I knew I had to recreate it at home.

How to make Chocolate Coconut Walnut Banana Bread:

  1. Preheat the oven to 350°F. Line a loaf pan with parchment paper.
  2. In a large mixing bowl, mash ripe bananas until mostly smooth (a few clumps are ok). Add melted butter, maple syrup, egg, and vanilla. Whisk until combined.
  3. Add flours, baking soda, cinnamon, and salt. Use a wooden spoon or spatula to combine until a smooth and pourable batter forms. Fold in walnuts, coconut flakes, and chocolate. Pour into prepared loaf pan. (Optional): Sprinkle over more chopped walnuts, coconut flakes, and chopped chocolate.
  4. Bake for 32-35 minutes until top is golden brown and toothpick inserted comes with a few moist crumbs. Allow to cool for 10 minutes before slicing.

Can I make this recipe gluten-free?

I have not tested a gluten-free version of this recipe, so I can not say how it will turn out. However, you are free to test out with a gluten-free flour! Let me know how it turns out.

How do I make this recipe vegan?

Substitute the 1 egg for 1 flax egg (1.5 tbsp flaxseed meal + 2 tbsp water).

Do I have to use almond flour?

I really love the addition of almond flour, as it adds a subtle nutty flavor and added texture. You are welcome to substitute it for 1/4 cup all-purpose flour.

  • 3 medium extra ripe bananas
  • cup vegan butter, melted

    The inside didn’t cook but am assuming it’s because I substituted the one cup of whole wheat flour for almond? Sob 🙁

      I have not tested this recipe using almond flour, but I would assume the amounts aren’t a 1-1 conversion.
