Perfectly crunchy baked cauliflower smothered in sweet and spicy bbq sauce. Paired with a creamy cabbage slaw and fresh cilantro. A delicious and satisfying healthy meal to start the new year off.
Ever since deciding to eat a plant-based diet a few years, I’ve never really looked at vegetables the same. For example, brussel sprouts to me are much more than tiny, tasteless cabbages, they can be roasted to perfection and smothered in a sweet and spicy sauce, or thrown into a flavorful salad.
Cashews aren’t just plain nuts. They can be blended into a luscious and creamy, cheesy sauce or roasted to provide a delicious nutty flavor to curries and stews.
And cauliflower provides the perfect baseline for a variety of mouthwatering recipes -providing a crunchy vegetable in a rich Thai curry, or in this case an ultra, crispy baked sweet and spicy bite, which is a great alternative to your traditional chicken wing (now, not quite the same but you get the point).
These Crispy Baked BBQ Cauliflower provide the perfect sweet and spicy crunch in every bite. Paired with a creamy cabbage slaw to add a touch of freshness to the dish. Top on brown rice and you got yourself the perfect healthy, wholesome meal to start off this new year.
Don’t worry, this dish is a lot easier than you think and is worth every minute of preparation.
