Crispy Baked BBQ Cauliflower Bowl

Ever since deciding to eat a plant-based diet a few years, I’ve never really looked at vegetables the same. For example, brussel sprouts to me are much more than tiny, tasteless cabbages, they can be roasted to perfection and smothered in a sweet and spicy sauce, or thrown into a flavorful salad.

Cashews aren’t just plain nuts. They can be blended into a luscious and creamy, cheesy sauce or roasted to provide a delicious nutty flavor to curries and stews.

And cauliflower provides the perfect baseline for a variety of mouthwatering recipes -providing a crunchy vegetable in a rich Thai curry, or in this case an ultra, crispy baked sweet and spicy bite, which is a great alternative to your traditional chicken wing (now, not quite the same but you get the point).

Ingredients
BBQ Cauliflower
  • 1 head of cauliflower, cut into large florets
  • 1 cup all-purpose or gf flour
  • ½ tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • Black pepper
  • 1 ¼ cup water
  • 1 cup breadcrumbs or GF breadcrumbs
  • 1 cup bbq sauce
Cabbage Slaw
  • ½ head of red cabbage, shaved
  • 1 carrot, peeled into strips
  • 2 tbsp vegan mayonaise such as Vegenaise
  • ½ tsp smoked paprika
Other Additions
  • 1 ½ cup brown rice, cooked
  • Fresh cilantro
Instructions
  1. Preheat the oven to 375 degrees. Line a baking sheet with a silicone baking mat or parchment paper.

  2. In a large bowl, combine flour and spices. Stir in water until a smooth batter forms. Pour breadcrumbs into a separate bowl. One-by-one, dunk the cauliflower into the wet mixture. Shake off any excess. Roll in breadcrumbs and transfer to the baking sheet. Bake cauliflower for 15 min. until golden brown.

  3. While cauliflower is baking, prepare the slaw. Toss together shaved cabbage and carrot ribbons with mayo and paprika in a bowl. Adjust taste with salt and pepper.

  4. Add cauliflower to a large bowl. Pour over bbq sauce and carefully stir to coat cauliflower.

  5. Serve bbq cauliflower over brown rice with cabbage slaw. Top with fresh cilantro and a dash of red pepper flakes.

    I’ve made these cauliflower bites a few times now and they’re amazing! Everyone loves them. This time I made them with a sweet sesame sauce instead. And it turned out really well! Here’s the recipe (measurements are estimated I kind of just wing it while making it!):

    – [ ] 1/3C honey
    – [ ] 1/4C soy sauce
    – [ ] 1 tsp fresh ginger
    – [ ] 1 tsp fresh garlic
    – [ ] 1 tbsp chill garlic sauce
    – [ ] 1 tbsp sesame oil
    – [ ] 1tsp Apple cider vinegar

    Bring to a boil mix in 1 tbsp corn starch slurry and remove from heat while constantly stirring
