Vegan Peanut Butter Cookies

Back in 2016, I posted one of my first recipes on my blog for vegan peanut butter cookies. It’s been a while since I’ve whipped these up and knew they needed some revamping.

I made a few changes to the recipe and I can assure you they are very addicting.

These cookies have a soft center and slightly crispy outside. They are then dipped in rich dark chocolate and sprinkled with flaky sea salt. You drooling yet?

What makes these cookies so good?

Softened coconut oil: A fat component will add richness and depth to your baked good, especially for these peanut butter cookies. It will also yield a delicious chewy and soft texture.

Coconut sugar: I have always been a fan of using coconut sugar in my baked goods because of its caramely flavor and it pairs perfectly with the rich, creamy peanut butter.

Cinnamon and nutmeg: These spices will add warmth and extra depth to the finished product.

Dark chocolate: I think we can all agree that chocolate makes any dessert better…well for the most part. Dip these cookies in some dark chocolate and finish with a sprinkle of sea salt and you’ll thank me later.

To make these cookies…

Preheat the oven to 350 degrees. Line a baking sheet with a silicone baking mat or parchment paper.

Start by creaming together the softened coconut oil, coconut sugar, peanut butter, non-dairy milk, and vanilla extract until smooth. Add flour, spices, baking powder, and salt. Use a wooden spoon or spatula to combine until a soft dough forms.

Use a small cookie scoop to evenly distribute dough on to the baking sheet. Use a fork to press down cookies forming a cross hatch design. Bake for 15 minutes. Let cookies cool on baking sheet for 5 minutes before transferring to a wire cooling rack. Let cool for 10 minutes before dipping into melted dark chocolate.

Melted dark chocolate and coconut oil. Dip half of each cookie into melted chocolate and sprinkle over flaky sea salt. Let the chocolate set for 10-15 minutes (transfer to fridge to speed up process).

Ingredients
  • ½ cup creamy peanut butter
  • ¼ cup softened coconut oil
  • ¼ cup + 2 tbsp non-dairy milk
  • 1 tsp vanilla extract
  • ¾ cup coconut sugar
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • ½ cup dark chocolate chips
  • 1 tsp coconut oil
Instructions
  1. Preheat the oven to 350 degrees. Line a baking sheet with a silicone baking mat or parchment paper.

  2. To a large mixing bowl, use a handheld mixer or whisk vigorously to combine peanut butter, coconut oil, milk, vanilla, and coconut sugar until creamy. Add flour, baking powder, spices, and salt. Use a wooden spoon or spatula to stir until a soft dough forms.

  3. Use a small cookie scoop to evenly distribute batter on to the baking sheet. Using a fork, press cookies down to form a cross hatch pattern (see photos above). Bake for 15 minutes. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire cooling rack. Cool for an additional 10 minutes before dipping in dark chocolate.

  4. Melt dark chocolate and coconut oil in the microwave in 30 second intervals. Dip half of each cookie in the dark chocolate followed by a sprinkle of sea salt. Let chocolate sit for 10-15 minutes (transfer to the fridge to speed up process).
