I found my new favorite breakfast this season. This Gingerbread Baked Oatmeal is filled with flavors of gingerbread form the molasses, ground ginger, allspice, cinnamon, and nutmeg. And it’s topped with a delicious brown sugar walnut streusel.

How to make Gingerbread Baked Oatmeal with Walnut Streusel:
- Preheat the oven to 350°F. Grease an 8×8″ baking dish if not non-stick.
- In a large mixing bowl, mash banana until smooth (a few small lumps remaining is ok). Whisk in milk, maple syrup, brown sugar, molasses, and vanilla extract. Add oats, spices, baking powder, and salt. Fold to combine. Pour mixture into the prepared baking dish and spread out evenly to distribute.
- To make the streusel, add walnuts and oats to a food processor. Pulse a few times until it resembles a coarse flour. Add brown sugar, flour, cinnamon, and coconut oil. Pulse a few more times until mixture resembles wet sand. Evenly sprinkle the streusel over the oats.
- Bake for 28-30 minutes until top is golden brown and oatmeal is firm and no longer jiggles. Let cool for 5 minutes before serving. Optionally drizzle over a simple powdered sugar icing or yogurt thinned with milk! Enjoy.

- 2 cups unsweetened, non-dairy milk
- ¼ cup maple syrup
- 1 tbsp brown sugar
- 2 tsp unsulphured molasses
- 1 tsp vanilla extract
- 2 ½ cups old-fashioned rolled oats
- 2 tsp ground ginger
- 1 tsp ground allspice
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp baking powder
- ¼ tsp black pepper (or a pinch)
- ¼ tsp salt
- ½ cup whole walnuts
- ⅓ cup brown sugar
- ¼ cup old-fashioned rolled oats
- 1 tbsp all-purpose flour
- ½ tsp ground cinnamon

This was so good! I usually make my stovetop oatmeal with the same spices and sweeteners, but the banana gave this baked version a really nice texture, especially after it set. I LOVE that there was no egg—I’m not vegan but I won’t support bad animal husbandry practices. Unfortunately the alternative is $7-8+/dozen where I live, so I’m always on the hunt for recipes that use fewer or no eggs so I can stretch my grocery budget a bit. I didn’t make the streusel (ran out of oats 😭) but I sprinkled chia seeds, flax seeds, and pepitas for some extra crunchy goodness on top! Can’t wait to do the streusel next time. And I think pecans would work beautifully either mixed in the oats or with the topping as well as the walnuts! Thanks for the great recipe, we’ll definitely be adding it to the breakfast rotation! 💖

Hi! Yes, it should keep in the fridge for up to a week (maybe more depending on how long you like your leftovers).
I want to bake this ahead before an event I’m having. How would you recommend reheating without drying out in the oven?

I’d probably recommend covering in foil, bake at 350°F oven for about 10–20 minutes, or until warmed through.
Looks delish but I can’t eat bananas. Can I sub unsweetened applesauce and if so, how much would you suggest? Tx in advance.

I made this today using unsweetened applesauce instead of banana. Came out amazing! I subbed Truvia brown for brown sugar as we’re trying to cut down on sugar. Next time I’d use 2T coconut oil instead of recommended 1/4 C. Such a nice breakfast treat!
These were so good! I was worried about these being high in calorie because of the streusel, but I put the ingredients into ChatGPT and they were 255 per 8 servings. I actually cut the recipe in half and made them into muffins, because I was just making them for me. Delicious and so high in fiber, it kept me full until lunch. Thanks for the recipe!

My 2 year old and I love this! I leave off the walnut streusel though.
I made this today! Very moist, love the spices….i didn’t use a food processor for the streusel, just used chopped nuts and quick oats, stirred it together…yummmm!!!!
Delicious! I used applesauce instead of banana since I didn’t have any on hand. I also made it in muffin tins. It was wonderful to grab 2 for breakfast each day last week. My son loved them as dessert! Yummy. Will definitely make again.

Hi Rose, I do not include nutrition facts for my recipe. However, you can input the ingredients and serving sizes into a nutrition calculator and that should work!
Omg this was delicious! I made exactly as written and it is perfect. I added a pat of butter to the top and will definitely make it again-perfect texture and sweetness.
This was really yummy! I made it gluten free with GF oats and it converted well. I will put this in my keeper file. I calculated the calories, and it came up to approximately 325 per serving.
