Ingredients
  • 1 tbsp flax seed meal
  • 2 tbsp water
  • ½ cup creamy peanut butter
  • ¾ cup non-dairy milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • ¼ cup coconut flour
  • ½ cup coconut sugar
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup dark chocolate chunks
  • ½ cup roughly chopped pretzels
Instructions
  1. Preheat the oven to 350 degrees. Line a 8×8 baking dish with parchment paper.

  2. Prepare flax egg by mixing flax seed meal and water in a small bowl. Set aside.

  3. In a large bowl, whisk together flax egg, peanut butter, non-dairy milk, maple syrup, and vanilla until creamy. Add flours, coconut sugar, baking powder, and salt. Use a spatula or wooden spoon to stir until a thick and smooth batter forms. Fold in ¾ of the chocolate chunks. Spread batter evenly in the prepared baking dish. Top with chopped pretzels and remaining chocolate chunks.

  4. Bake for 22-25 min. until toothpick inserted comes out clean and edges are starting to pull away. Let cool for 10 min. before slicing into nine even bars.

    I have looked at many chicpea blondie recipes and have yet to make them. BUT these I HAVE to make! Yum!
