An updated version of my Chocolate Chip Pretzel Peanut Butter Blondies. This version is fluffier, perfectly moist, and oh so gooey. If you’re a fan of sweet and salty desserts that I assure you you will be all over this one.

Soft and fluffy peanut butter blondies embedded with chunks of gooey chocolate and topped with crunchy pretzel bits. The perfect balance of sweet and salty.
- 1 tbsp flax seed meal
- 2 tbsp water
- ½ cup creamy peanut butter
- ¾ cup non-dairy milk
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 cup almond flour
- ¼ cup coconut flour
- ½ cup coconut sugar
- 1 ½ tsp baking powder
- ¼ tsp salt
- 1 cup dark chocolate chunks
- ½ cup roughly chopped pretzels

Preheat the oven to 350 degrees. Line a 8×8 baking dish with parchment paper.

Prepare flax egg by mixing flax seed meal and water in a small bowl. Set aside.

In a large bowl, whisk together flax egg, peanut butter, non-dairy milk, maple syrup, and vanilla until creamy. Add flours, coconut sugar, baking powder, and salt. Use a spatula or wooden spoon to stir until a thick and smooth batter forms. Fold in ¾ of the chocolate chunks. Spread batter evenly in the prepared baking dish. Top with chopped pretzels and remaining chocolate chunks.

Bake for 22-25 min. until toothpick inserted comes out clean and edges are starting to pull away. Let cool for 10 min. before slicing into nine even bars.
