A savory Grain-free Black Bean Fiesta Bowl with a black bean walnut “meat”, fresh vegetables, and perfectly spiced riced cauliflower. This recipe is simple to make, 100% plant-based, and gluten-free.

Ingredients
Black Bean Walnut 'Meat'
  • ¾ cup raw walnuts
  • 2 tsp olive oil
  • ½ yellow onion, finely chopped
  • 3 cloves garlic, minced
  • Pinch of salt and pepper
  • ½ tsp smoked, sweet paprika
  • ½ tsp ground cumin
  • ½ tsp dried oregano
  • One 15 oz. can black beans, drained and rinsed
Bowl Additions
  • One container CAULIPOWER Rice Baja Style
  • 2 cups fresh vegetables of choice, cut to preference (I used thinly sliced red cabbage, mixed greens, chopped tomato, and sliced jalapeno)
  • 1 avocado, sliced
  • 1 lime, sliced into wedges
  • ½ cup fresh cilantro, roughly chopped
Instructions
  1. Toast walnuts in a medium skillet over medium-low heat until they take on a bit of color and are fragrant. Transfer to a food processor.

  2. In the same skillet, heat 2 tsp olive oil over medium-high. Add onion, garlic, salt, and pepper. Cook for 3-4 minutes until soft and translucent. Add spices and toast for 1 minute. Add black beans, stir, and cook for 2-3 minutes, until black beans are slightly crispy. 

  3. Transfer bean mixture to food processor. Blitz mixture a couple times to combine. 

  4. Cook CAULIPOWER Rice according to package directions. 

  5. Assemble: Spoon rice into 2-3 bowls, top with fresh vegetables, black bean 'meat', sliced avocado, lime wedge, and fresh cilantor. (Optional): Drizzle with plant-based sour cream.
