This recipe is only made with simple ingredients and requires little fuss to make. Everything is blended into a food processor and transferred to the freezer for 10 min. to firm up. That’s it. That easy.

Easy, simple, no-bake chocolate cookies stuffed with a decadent no-bake cookie dough. So soft, chocolatey, and perfectly sweet.
- ½ cup creamy peanut butter
- ¼ cup maple syrup
- 1 tbsp melted coconut oil
- 1 tbsp non-dairy milk
- 1 cup oat flour
- ½ cup almond flour
- ¼ cup cocoa powder
- Pinch of salt
- 2 tbsp maple syrup
- ¼ cup peanut butter
- 1 tsp vanilla extract
- ½ cup almond flour
- ½ cup chocolate chips

To a food processor, process peanut butter, maple syrup, coconut oil, and milk until smooth. Add oat flour, almond flour, cocoa powder, and salt. Process until it comes together and a soft dough forms. Take a small cookie scoop to obtain about 3 tbsp of dough. Form into eight smooth balls and place on a baking sheet or plate.

Prepare the cookie dough. To the food processor, process peanut butter and vanilla until smooth. Add almond flour and process until a dough forms. Add in chocolate chips and blitz until combined.

Take the chocolate cookie balls and flatten to a small disc with the palm of your hand. Take 1 tsp of cookie dough and place in the center of the chocolate cookie disc. Wrap the sides around the cookie dough to completely cover it. Roll it into a ball (you shouldn't see any bits of cookie dough). Flatten back into a disc and smooth edges if rough. Place back on the baking sheet or plate. Form any remaining cookie dough into small balls for little cookie dough bites!

Freeze for 10 min. until firm. Store in the fridge in an airtight container for a softer cooker or freezer for a firmer one.

My girlfriend and I made these today and struggled a bit because our food processor broke halfway through the process (LOL) but we managed to follow through and they still turned out good!!
