It’s back to school season and it definitely looks a lot different this year. That doesn’t mean back to school snacks are no more. Many of us will have busier schedules and less time to prepare healthy meals and snacks.

These granola bars, however, are extremely easy and quick to make. They are the perfect snack to keep in your fridge and a pick me up during your busy school or work day.

These granola bars contain simple, healthy ingredients, such as:

peanut butter, maple syrup, coconut oil, almonds, oats, pumpkin seeds, cinnamon, and sea salt.

Top with some dark chocolate chips for some added sweetness…because chocolate makes everything better, right?

To make these granola bars…

Combine peanut butter, maple syrup, and coconut oil in a medium saucepan. Whisk continuously over medium heat until creamy and coconut oil is melted.

Take off the heat. Add oats, almonds, pumpkin seeds, cinnamon, and sea salt. Use a wooden spoon or spatula to combine. Press mixture into an 8×10 parchment-lined baking dish.

(Optional): Sprinkle over dark chocolate chips and press into the mixture.

Refrigerate for 1 hour to set. Cut into 8 bars.

Ingredients
  • ½ cup creamy peanut butter
  • cup maple syrup
  • 2 tbsp coconut oil
  • 2 cups rolled oats
  • 1 cup chopped almonds
  • ½ cup pumpkin seeds
  • ½ tsp ground cinnamon
  • ¼ tsp sea salt
  • ¼ cup dark chocolate chips
Instructions
  1. In a medium saucepan, combine peanut butter, maple syrup, and coconut oil. Whisk over medium heat until creamy and coconut oil is melted. Take off the heat. Add oats, almonds, pumpkin seeds, cinnamon, and sea salt. Use a wooden spoon or spatula to fold and combine until it resembles a granola mixture.

  2. Spread mixture into an 8×10 parchment-lined baking dish. Sprinkle over dark chocolate chips and press into the dough. Refrigerate for 1 hour to set. Cut into 8 bars. Store in an airtight container in the fridge.
