Pumpkin Cream Cheese Streusel Bread

Soft and fluffy warmly spiced pumpkin bread with a creamy cheese filling and buttery streusel topping.

This pumpkin cream cheese streusel bread is the perfect cozy fall treat, with a warmly spiced pumpkin loaf layered with a creamy cheesecake filling and topped with a buttery pecan streusel.

Why you’ll love this Pumpkin Cream Cheese Streusel Bread:

Perfectly spiced. Pumpkin puree and warming spices come together for a cozy, flavorful loaf that’s perfect for fall.

Creamy and crunchy. A sweet cream cheese layer adds a rich, creamy center, while the buttery pecan streusel creates the perfect buttery and crunchy topping.

Soft and tender. Pumpkin keeps the bread incredibly moist and tender.

Ingredient Breakdown + Recipe Modifications:

  • Milk: Adds moisture to the batter and helps create a soft, tender texture. Any milk can be used.
  • Apple cider vinegar: Reacts with the baking soda to help the loaf rise and creates a lighter, more tender texture.
  • Pumpkin puree: Adds moisture, natural sweetness, and plenty of pumpkin flavor.
  • Vegetable oil: Adds moisture and richness. A neutral-flavored oil works best.
  • Light brown sugar: Sweetens the loaf while adding moisture and a subtle caramel-like flavor.
  • Granulated sugar: Adds sweetness and helps create a tender texture with lightly crisp edges.
  • Vanilla extract: Enhances the pumpkin and warm spices while adding depth of flavor.
  • All-purpose flour: Provides structure while keeping the pumpkin bread soft and tender.
  • Egg: Helps bind the ingredients together while providing richness and moisture.
  • Baking soda & baking powder: Work together to help the loaf rise and create a light, tender crumb.
  • Cinnamon, nutmeg, cloves, & ginger: Adds warm, cozy flavor that pairs perfectly with pumpkin.
  • Salt: Enhances the sweetness and balances the warm spices and pumpkin flavor.

How to make Pumpkin Cream Cheese Streusel Bread:

  1. Preheat oven to 350℉. Grease and line a 8×5″ loaf tin with parchment paper.
  2. Start by making the streusel. In a medium mixing bowl, whisk together flour, pecans, sugars, and salt. Use clean fingertips to pinch the softened butter into the dry ingredients until well combined. Set aside.
  3. In a separate medium mixing bowl, make the filling. Use a handheld mixer to combine the cream cheese, egg, sugar, flour, and vanilla until creamy. Set aside.
  4. In a large mixing bowl, make the pumpkin bread. Whisk together pumpkin puree, sugars, oil, milk, egg, vinegar, and vanilla until combined. Add flour, spices, baking soda and powder, and salt. Use a rubber spatula or wooden spoon to fold dry ingredients into wet until a smooth batter forms.
  5. Pour half of the pumpkin bread batter into the loaf tin. Spread an even layer of the cream cheese filling over the batter. Pour over the remaining pumpkin bread batter. Sprinkle over streusel topping.
  6. Bake bread for 45-55 minutes until a toothpick inserted comes out clean (a few moist crumbs are ok). Let bread cool in the tin for 15 minutes before carefully transferring to a wire cooling rack before cooling for another 15-20 minutes. Slice and enjoy!

Pro Tips:

  • Don’t overmix the batter. Mix just until the flour is incorporated to keep the pumpkin bread soft and tender.
  • Use room-temperature cream cheese. This helps the cream cheese layer blend smoothly and spread evenly over the pumpkin batter.
  • Let it cool completely. Allow the bread to cool fully before slicing so the cream cheese layer has time to set and you get clean slices.

Frequently asked questions:

Can I make this recipe dairy free?
Yes! Feel free to use vegan butter, vegan cream cheese, and non-dairy milk.

Can I use a different type of nut in the streusel?
Yes! Walnuts are a great substitute for pecans, or you can leave the nuts out entirely.

Storage:

Because of the cream cheese layer, store the bread in an airtight container in the refrigerator for up to 4–5 days. Let it sit at room temperature for about 15–20 minutes before serving for the best texture.
