Longer days are approaching, which seems unfortunate, but fortunately that means another excuse to sleep in and treat yourself to a breakfast feast. Or is that just me?

My idea of an ideal fall breakfast, includes a stack of fluffy pumpkin spiced pancakes topped with a pad of butter, drowned in maple syrup, and served with a savory side. This recipe happens to be just that.

These pancakes only contain 6 simple ingredients! All the work is already done for you with the help of O Organics Gluten-free Pancake and Waffle Mix. Simply combine the mix with non-dairy milk, oil (or in this case, pumpkin puree), and egg (to make it vegan, use a flax egg).

In my opinion, pancakes are not complete with a healthy dose of maple syrup. O Organics 100% Pure Maple Syrup is extra flavorful, affordable, and all natural.

Ingredients
  • 1 tbsp flaxseed meal
  • 2 tbsp water
  • 1 cup non-dairy milk
  • 2 tbsp pumpkin puree
  • 1 tsp vanilla extract
  • 1 cup O Organics Gluten-Free Pancake and Waffle Mix
  • 1 ½ tsp pumpkin spice
Optional Additions
  • O Organics 100% Pure Maple Syrup
  • Vegan butter
  • Chopped walnuts
  • O Organics Plant-Based Breakfast Patties
Instructions
  1. Combine flaxseed meal and water in a small bowl. Set aside for 5 minutes to thicken.

  2. In a large mixing bowl, whisk together flax egg, milk, pumpkin puree, and vanilla extract.

  3. Add pancake mix and pumpkin spice. Whisk until smooth and creamy.

  4. Heat a large skillet on medium. Pour ¼ cup batter into the pan and cook until edges become matte and a few bubbles form in the center. Flip, and cook until golden brown.

  5. Serve pancakes with a pad of vegan butter, drizzle of maple syrup, and chopped walnuts. Serve with a couple breakfast patties (cooked according to package directions).
