How to Make Spicy Peanut Ramen Noodles:

This is a simple and quick recipe.

  1. Start by preparing the peanut sesame oil. Combine red pepper flakes and lemon zest in a small bowl.
  2. In a large skillet, heat 1/4 cup sesame oil. Once hot, add chopped peanuts. Toast peanuts for 1-2 minutes until light golden and fragrant. Pour hot oil over red pepper flakes and lemon zest. Stir to combine. Set aside.
  3. In a saucepan, whisk together peanut sauce ingredients. Cook over medium heat for 2-3 minutes until slightly thickened and bubbly. Pour in a bowl and set aside.
  4. Cook ramen noodles according to the package directions. Drain.
  5. While the ramen is cooking, in the same skillet used to make the oil, melt 1 tbsp coconut oil over medium-high. Add onion, garlic, ginger, and a pinch of salt. Saute for 4-5 minutes until onion is soft and translucent. Add snap peas and cook for 2 minutes more until they take on some color.
  6. Add ramen noodles, the rest of the peanut sauce, and 2 tbsp of peanut sesame oil. Use tongs or chopstick to stir to fully coat noodles and vegetables in sauce and oil.
  7. Serve noodles and top with sliced green onion, sesame seeds, and optionally a drizzle of peanut sesame oil.

Ingredients
Peanut Sesame Oil
  • 3 tsp red pepper flakes
  • 1 tsp lemon zest
  • ¼ cup sesame oil
  • cup finely chopped, peanuts
Peanut Sauce
  • cup low-sodium soy sauce
  • 2 tsp miso paste
  • 1 tbsp creamy peanut butter
  • 1 tbsp honey (or maple syrup)
Noodles
  • 2 ramen squares
  • ¼ yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 4 oz. snap peas
  • Sliced green onion
  • Sesame seeds
Instructions
  1. Start by preparing the peanut sesame oil. Combine red pepper flakes and lemon zest in a small glass bowl. 

  2. In a large skillet, heat ¼ cup sesame oil. Once hot, add chopped peanuts.  Toast peanuts for 1-2 minutes until light golden and fragrant. Pour hot oil over red pepper flakes and lemon zest. Stir to combine. Set aside.

Recipe Notes

*Recipe makes more peanut sesame oil than needed. Store in an airtight container in the fridge. Heat up for use again.
