Now that I know how easy it is to make donuts at home, you will not see me at a donut shop for a long time.

Homemade baked donuts are so simple to make with no deep frying required.

You just make the batter, pipe it into a donut pan, bake, roll in cinnamon-sugar, and enjoy warm!

Vegan Gingerbread Baked Donuts

How to make Gingerbread Baked Donuts:

  1. Preheat oven to 350°F. Grease a donut pan with cooking spray. 
  2. Whisk together the flour, sugars, baking powder, salt, and spices in a large mixing bowl. Pour in the milk, oil, melted butter, molasses, and vanilla. Use a rubber spatula or wooden spoon to mix until a smooth batter forms.
  3. Spoon the batter into the donut pan, OR fill a large ziplock bag with the batter, cut a hole in the corner and pipe into the pan, filling about 3/4 of the way full. Be careful not to overfill, as the donuts will rise. 
  4. Bake for 13-14  minutes or until the edges are lightly golden brown. While donuts are baking, whisk together cinnamon and sugar in a shallow bowl. Let donuts cool for two or three minutes in the pan then toss in cinnamon sugar.

Ingredients
  • 2 cups (277g) all-purpose flour
  • ½ cup (102g) granulated sugar
  • â…“ cup (66g) light brown sugar
  • 2 tsp baking powder
  • ½ tsp kosher salt
  • 1 ½ tsp ground ginger
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¾ cup (187g) unsweetened, non-dairy milk
  • ¼ cup (57g) vegetable oil
  • 2 tbsp vegan butter, melted
  • 1 tbsp molasses
  • 2 tsp vanilla extract
  • Cinnamon sugar topping: ½ cup granulated sugar + 2 tbsp ground cinnamon
