This Vegan Pad See Ew filled with rice noodles, fried tofu, and Chinese Broccoli tossed in a savory sauce is flavor-packed, simple to make, and ready in less than 15 minutes.

What is Pad See Ew?
Pad See Ew is a popular Thai street food dish that consists of chewy rice noodles stir fried with a protein (usually chicken or pork), gai lan (Chinese broccoli), and egg all tossed in a savory soy sauce blend.
I created my own vegan version of Pad See Ew and it’s flavor packed without any egg or meat! I used fried tofu in replace of meat, vegan oyster sauce, and omitted fish sauce and egg.

Ingredient Breakdown:
- Fried tofu – ideally, you’ll want to use pre-fried tofu. This will add extra texture and reduce prep.
- Garlic – for added flavor.
- Gai lan – aka Chinese Broccoli. This is traditional in Pad See Ew and can be found at most Asian Grocery Stores.
- Fresh rice noodles – ideally, you’ll want to use fresh wide rice noodles opposed to dry. It can be really easy to overcook the noodles and you don’t want this in this recipe! Also buying pre-cooked noodles reduces prep significantly.
- Vegan oyster sauce – Lee Kum Kee and Panda Brand has vegan/vegetarian oyster sauce.
- Dark soy sauce – adds darker color to the noodles.
- Thai soy sauce – for a more authentic taste. Can be found in most Asian grocery stores in soy sauce section.
- Golden Mountain sauce – this soy sauce is used in a lot of Thai cooking and really elevates the flavor profile. It is sweeter and saltier than regular soy sauce. If you can’t find this, you can substitute with Maggi soy sauce or regular soy sauce.
- Sugar – balances all the salty flavor in this recipe.
- White pepper – adds a spicier kick than black pepper.

How to make Vegan Pad See Ew:
- Whisk together all ingredients for sauce in a bowl until sugar has dissolved. Set aside.
- Heat 1 tbsp oil in a large wok or non-stick skillet over medium-high heat. Add garlic and saute for 45 sec-1 min until golden brown. Add Chinese broccoli and fried tofu and stir to combine.
- Add the noodles and sauce. Toss well to fully coat noodles and broccoli in sauce.
- Spread the noodles out in a single layer and cook untouched for 15-30 seconds to give them some char. Flip and char on the other side.
- Serve immediately topped optionally with chili vinegar.


Recipe Modifications + Serving Suggestions:
Substitute tofu with chicken, pork, or shrimp.
Substitute Thai soy sauce for regular soy sauce.
Substitute Golden Mountain sauce for Maggi sauce or light soy sauce.
If you’re not vegan/vegetarian, add 1 tsp of fish sauce for added flavor.
I recommend serving this Pad See Ew topped with Thai chili vinegar.
Storage + Reheating Instructions:
Cool padd see ew to room temperature and store in an airtight container in the fridge for up to 4-5 days.
Reheat in a microwave until warm.

Ingredients
Stir Fry
- 6 oz fried tofu, cut into strips
- 2 tbsp neutral-flavored oil, divided
- 3 cloves garlic, thinly sliced
- 3 cups Gai lan (Chinese Broccoli), chopped
- 1 lb room temperature, fresh wide rice noodles
- (Optional) chili vinegar, for serving
Sauce
- 2 tbsp vegan oyster sauce
- 1 tbsp dark soy sauce
- 1 tbsp Thai soy sauce or sub light soy sauce
- 1 tbsp Golden Mountain Sauce (or mix 2 tbsp soy sauce, 2 tbsp broth of choice, 1/4 tsp sugar and use 1 tbsp of that)
- 1 ½ tsp granulated sugar
- ¼ tsp white pepper
Instructions
