Healthier High Protein Cinnamon Rolls
Soft and fluffy cinnamon rolls that packed 5 g protein per roll.

Ingredients
- ½ cup cottage cheese (2% or 4%)
- 1 ¼ cup all-purpose flour
- 2 tsp baking powder
- ¼ tsp salt
- ¼ cup non-fat greek yogurt
- 2 tbsp milk
- 1 tbsp maple syrup
- ½ tsp vanilla extract
Filling
- ¼ cup brown or coconut sugar
- 1 tbsp ground cinnamon
- 1 tbsp unsalted butter, softened
Icing
- ½ cup powdered sugar
- 2-3 tsp milk
- ½ tsp vanilla extract
Instructions
- Add cottage cheese to a food processor and process until just blended. The texture should be smooth with several small chunks remaining, similar to the texture of greek yogurt.
- In a large mixing bowl, whisk together flour, baking powder, and salt. Add blended cottage cheese, yogurt, milk, maple syrup, and vanilla. Stir well with a spoon until a soft dough forms. Form into a smooth ball.
- Add dough to a floured surface. Roll into a ~¼" rectangle. Combine the cinnamon and sugar in a bowl. Spread softened butter over the entire rectangle. Sprinkle over cinnamon sugar mixture.
- Roll up the dough starting from the longer side into a long log. Cut the dough into 8-10 even-sized slices.
- Preheat air fryer to 350°F. Coat the basket with non-stick cooking spray. Place rolls in the air fryer, trying not to overcrowd the basket. Spray with non-stick cooking spray. Air fry for 7-8 minutes until fluffy and golden brown.
- Whisk together icing ingredients until creamy. Top on warm cinnamon rolls and enjoy.
