Chocolate Chip Sea Salt Almond Granola Bars

Ingredients
  • 1 cup dates, pitted
  • 1/2 cup agave
  • 1 tsp vanilla extract
  • 1 tsp molasses
  • 1 1/2 cups rolled oats
  • 1 1/2 cups rice puff cereal
  • 3/4 cup finely chopped almonds
  • 2 tbsp ground flax seed meal
  • 1 tsp flaky sea salt
  • 1/3 cup chocolate chips
Instructions
  1. Preheat the oven to 300 degrees. 

  2. Soak dates for 15 min. in boiling water to soften. Transfer to a food processor and process with agave, vanilla, and molasses until smooth. 

  3. In a large mixing bowl, using a wooden spoon or sturdy spatula, combine the date paste with the rest of the ingredients until a thick and slightly sticky "dough" forms.

  4. Form mixture into a 8x4-inch log on piece of parchment paper. You may need to slightly wet your hands for this step, so the batter doesn't stick. Cut into 8 equal rectangles and arrange on a parchment-lined baking sheet. Bake for 20 min. Allow to cool for 15 min. before eating.
