These cereal bars are the perfect snack to cure your sweet tooth AND they pack 12 g protein per bar!

Simple and easy to make. This recipe takes less than 30 minutes to make and requires simple ingredients.

Chewy and crunchy. The cereal in these bars makes these bars deliciously crunchy and the almond butter and honey provides a chewy interior.

Protein and fiber-rich. Each bar contains 12 g protein and 3 g fiber!

Ingredient Breakdown:

  • Catalina Crunch Pumpkin Spice Cereal – I love using protein cereal in this recipe for an added protein boost and flavor, but you can use any similar shaped cereal or different protein cereal brand. If it’s a plain flavor, I recommend adding 1 tsp pumpkin spice.
  • Vanilla protein powder – I used a collagen vanilla protein powder, but any will do!
  • Almond butter – I recommend creamy, unsalted. Peanut butter also works well!
  • Honey – this provides sweetness and a chewy texture. Can sub with maple syrup but may need to reduce slightly since it’s a thinner consistency.
  • Mini chocolate chips – these are optional but highly recommended!

How to make Chocolate Chip Pumpkin Spice Cereal Bars:

  1. Line an 8×8” baking dish with parchment paper. 
  2. In a large mixing bowl, combine cereal with protein powder. 
  3. In a small saucepan over medium-heat, melt together almond butter and honey. Remove from heat and whisk in vanilla.
  4. Pour into the protein cereal mix and stir well to combine. Pour mixture into a lined baking dish and press down firmly to hold into place. Top with mini chocolate chips.
  5. Refrigerate for at least 30 minutes to firm up. Cut into 8 even-sized bars. Store bars in an airtight container in the fridge for up to 1- 1 1/2 weeks 

Recipe Modifications:

To make this recipe vegan: use a plant-based vanilla protein powder and sub honey with agave or maple syrup.

To reduce sugar content: sub honey for a sugar-free honey substitute and/or omit chocolate chips.

Storage Instructions:

Store cereal bars in an airtight container in the fridge for up to 1 week or in the freezer for up to 1 month.
