A perfect on-the-go protein packed snack that tastes like a cookie? I’m all for it. Soft and sweet with notes of cinnamon and almond. Takes like than 15 min. to make and I’m sure will be gone in your mouth within the minute.

I make some form of energy bite every week, because it’s a perfect post-workout snack! Super easy to grab a couple and bring on the go. Loaded with protein and fiber to keep you satisfied for longer.

These Snickerdoodle Energy Bites are loaded with almonds, oats, cinnamon, maple syrup, coconut oil, and dates. Simple ingredients. Oh so tasty.

Snickerdoodle Energy Bites

Ingredients
  • 1 cup rolled oats
  • ¾ cup almond flour
  • 2 tbsp melted coconut oil
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 3 pitted, medjool dates
  • 1 tbsp water
  • 2 tbsp ground cinnamon
Instructions
  1. Process rolled oats in a food processor until it resembles a fine flour. Add in the rest of the ingredients (except cinnamon) and blend until it comes together and starts to form a ball. Taking 2 tbsp of dough at a time, roll into balls. Add cinnamon to a small bowl. Roll balls in cinnamon to coat. Transfer to a parchment lined container. Store in the fridge in an airtight container. Enjoy!
