- 1 cup rolled oats
- ¾ cup almond flour
- 2 tbsp melted coconut oil
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 3 pitted, medjool dates
- 1 tbsp water
- 2 tbsp ground cinnamon

Process rolled oats in a food processor until it resembles a fine flour. Add in the rest of the ingredients (except cinnamon) and blend until it comes together and starts to form a ball. Taking 2 tbsp of dough at a time, roll into balls. Add cinnamon to a small bowl. Roll balls in cinnamon to coat. Transfer to a parchment lined container. Store in the fridge in an airtight container. Enjoy!
