Snickerdoodle Energy Bites

A soft & sweet energy-packed bite reminiscent of a delicious snickerdoodle cookie.

A perfect on-the-go protein packed snack that tastes like a cookie? I’m all for it. These Snickerdoodle Energy Bites are soft and sweet with notes of cinnamon and almond. And they are prepared in less than 15 minutes!

I make some form of energy bite every week, because it’s a perfect post-workout snack! They are super easy to grab a couple and bring on the go. Loaded with protein and fiber to keep you satisfied for longer.

These Snickerdoodle Energy Bites are loaded with almonds, oats, cinnamon, maple syrup, coconut oil, and dates. Simple ingredients and oh so tasty.

How to make Snickerdoodle Energy Bites:

  1. Add rolled oats to a food processor. Process until it resembles a coarse flour. Add the almond flour, coconut oil, maple syrup, almond butter, vanilla extract, dates, and ½ tsp ground cinnamon. Process until it comes together (it should form easily into a ball when pressed between your hands).
  2. In a small shallow bowl, whisk together ¼ cup granulated sugar and 1 tbsp ground cinnamon. Take ~2 tbsp of dough and roll into a smooth ball. Roll around in the cinnamon-sugar mixture to fully coat. Transfer to a parchment-lined plate. Repeat with remaining dough.
  3. Store the snickerdoodle bites in an airtight container in the fridge for up to 2-3 weeks. Enjoy!

  • 1 tbsp creamy almond butter (or sub other nut butter)
  • 1 tsp vanilla extract
  • 4 pitted, medjool dates
