I’ve been on a yogurt and granola kick lately, but I felt like it was missing something. This time of year I am all in for all things pumpkin, so essentially I had to “pumpkinfy” my granola. Yep…that’s what it was missing.
This granola is incredibly easy, forms the crunchiest clusters, and contains simple, healthy ingredients.

This granola contains simple ingredients, including:
coconut oil, pumpkin puree, maple syrup, almond butter, pumpkin spice, rolled oats, walnuts, coconut flakes, pumpkin seeds, and sea salt.
Feel free to customize the granola to your liking, such as:
Walnuts -> other nuts of choice (hazelnuts, almonds, cashews)
Almond butter -> other nut butter (peanut, cashew, sunflower)
Pumpkin seeds -> other seeds of choice (chia, hemp)

To make this granola, start by preheating the oven to 350 degrees. Line a baking sheet with parchment paper or silicone baking mat.
Whisk together melted coconut oil, pumpkin puree, maple syrup, and almond butter.
Add pumpkin spice, oats, walnuts, coconut flakes, pumpkin seeds, and salt. Use a wooden spoon or spatula to combine. Spread granola in an even layer on the prepared baking sheet.
Bake for 20 minutes until golden brown. Allow cooling for 10 minutes before transferring to an airtight container.

- ¼ cup maple syrup
- 2 tbsp creamy almond butter
- 1 ½ tsp pumpkin spice
- 2 cups rolled oats
- ½ cup walnuts
- ½ cup coconut flakes
- ¼ cup pumpkin seeds
- Pinch of flaky sea salt
