My chocolate chip cookie dreams have come true. Don’t get me wrong, I love a traditional chocolate chip cookie filled with vegan butter and cane sugar, but knowing I have a major sweet tooth and would like to have cookies more often, it’s nice to have healthier options.
These cookies are sweetened with coconut sugar and contain almond and coconut flour. Instead of vegan butter, coconut oil is used instead. And of course…always vegan here.
They are so soft and moist…and will simply melt in your mouth.
I highly recommend using chopped dark chocolate for this recipe opposed to chocolate chips. The chunks of chocolate will create the most luscious pools of chocolate and will be sure to create that ooey, gooey texture.

- 1 flax egg (1 tbsp flax seed meal + 3 tbsp water)
- ¼ cup softened, coconut oil
- ¼ cup creamy tahini
- ½ cup coconut sugar
- 1 tsp vanilla extract
- 2 tbsp non-dairy milk
- 1 cup almond flour
- ¼ cup coconut flour
- ½ tsp baking soda
- Pinch of flaky sea salt
- ½ cup chopped, dark chocolate

Preheat the oven to 350 degrees. Line a baking sheet with a silicone baking mat or parchment paper.

In a small bowl, combine flax seed meal and water. Set aside.

To a large bowl, cream together the softened coconut oil, tahini, and sugar until creamy. Mix in the vanilla, milk, and flax egg until combined. Add flours, baking soda, and a pinch of flaky sea salt. Stir until a soft dough forms. Fold in the chopped dark chocolate.

Using a small cookie scoop, scoop dough onto the prepared baking sheet. Slightly flatten down with the palm of your hand. Bake for 18 min. until tops are light golden brown. Let cool for 8 minutes. Sprinkle with a bit more flaky sea salt before serving.

Can I reduce the sugar to 1/3 cup?

Hi Olivia, I have not tested this recipe with reduced sugar. It might yield a less moist and chewy cookie but should be pretty similar in taste. Let me know if you try it out!
