I’ve been seeing these all over Instagram lately and knew I had to whip up a batch of my own. My healthier chocolate chip cookie recipe has been a hit lately and I think I have made too many batches to count in the last month, so I knew these were the perfect fit to pair with ice cream.
These gluten-free chocolate chip cookies are perfectly chewy and soft which pairs just right with the creamy, thick banana ice cream.
The banana ice cream is made with only three simple ingredients: frozen bananas, non-dairy milk, and vanilla extract.
Couldn’t get any easier than that.

To make these cookies start off by prepping one batch of chocolate chip cookies. Allow cookies to cool completely before topping with banana ice cream.
While cookies are cooling, add frozen bananas, non-dairy milk, and vanilla in a high-powered blender. Blend until thick and creamy.
If your blender isn’t very powerful, you may need to add additional milk to help blend. If the ice cream turns out runnier, spread in a loaf pan and freeze for 20 minutes then scoop.
Spread over a thick scoop of banana ice cream on one cookie then press down with a second cookie. Transfer sandwiches to a plate then freeze for 15 minutes to set.
Store in an airtight container in the freezer.

- 1 batch chocolate chip cookies
- 4 medium frozen bananas
- 2-3 tbsp non-dairy milk
- 1 tsp vanilla extract

Prepare one batch of chocolate chip cookies. Allow to completely cool before topping with ice cream.

In a high-powered blender, add frozen bananas, non-dairy milk, and vanilla extract. Blend until thick and creamy. You may need to scrape down the sides frequently. If you are having trouble blending the bananas, add more milk as needed. However, if it is too liquidy spread in a parchment-lined loaf pan and freeze for 20 minutes to set then scoop.

Spread a scoop of ice cream on one cooled cookie then press down with a second cookie. Place sandwiches on a plate or in a large container and freeze for 25 minutes to set.
