This chai spice blend has been going in everything and anything in my kitchen lately. There’s nothing more than what a little spoonful of warming spices will do to your baked goods.
These cookies are filled with all the right ingredients, such as creamy almond butter, almond flour, coconut flour, coconut oil, and chai spice.
They are ultra gooey, soft, chewy, and the perfect warming treat paired alongside a hot cup of coffee or tea during these self-isolated days.

- 1 tbsp flax seed meal
- 2 tbsp water
- ¼ cup softened, coconut oil
- ¼ cup creamy almond butter or sub other nut butter
- ½ cup coconut sugar
- 1 tsp vanilla extract
- 2 tbsp non-dairy milk
- 1 cup almond flour
- ¼ cup coconut flour
- ½ tsp baking soda
- Pinch of flaky sea salt
- ½ cup chopped, dark chocolate
- 3 tsp cinnamon
- 2 tsp ginger
- 2 tsp cardamom
- 1 tsp allspice
- 1 tsp nutmeg
- 1 tsp cloves

Combine all spices in a small jar. Seal and store at room temp.

Preheat the oven to 350 degrees. Line a baking sheet with a silicone baking mat or parchment paper. To a small bowl, whisk together flax seed meal and water. Let sit for 5 min. to thicken.

To a large mixing bowl or stand mixer, combine softened coconut oil, almond butter, and coconut sugar. Using a handheld mixer or stand mixer, cream ingredients together until smooth. Mix in flax egg, vanilla, and milk until combined. Add flours, baking soda, salt, and 2 tsp chai spice. Using a wooden spoon or spatula, stir until a smooth dough forms. Fold in chopped chocolate.

Use a cookie scoop to scoop dough onto prepared baking sheet. Bake for 18 min. Let cool for 10 min. before serving.
