Ingredients
  • 1 cup soaked, raw cashews soaked in boiling water for 15 minutes
  • 1 medium carrot, steamed until soft
  • 1 tbsp nutritional yeast
  • 2 tsp miso paste
  • 1 tsp minced garlic
  • 1 tsp tapioca starch or sub arrowroot or corn starch
  • Juice from 1/2 lemon
  • ¼ tsp smoked paprika
  • ¼ tsp turmeric
  • ¼ tsp kosher salt
  • ¼ cup + 3 tbsp non-dairy milk
Instructions
  1. Combine all ingredients in a high-speed blender. Blend until creamy and smooth. Adjust seasoning (salt and pepper) if needed.

  2. Store in an airtight container in the fridge for up to a week.

    Ths is sounds perfect for summer night in the garden, with nachos and some cold drink! I am thinking like Mojito or Hugo 🙂 Thank you for sharing it!

    What kind of high-speed blender do you use for cashew and other nuts? It looks so creamy, I can’t wait to try it!

      Thank you Caitlin! I used a vitamix but any blender would work just as long as you soak them for a while.
