They are super easy to make and contain simple, healthier ingredients, such as almond flour, almond butter and coconut oil.

Fudgy, melt-in-your-mouth almond brownies. Studded with sliced almonds and made with almond flour. They are also gluten-free, grain-free, and of course vegan.
- 1 tbsp flax seed meal
- 2 tbsp water
- ¼ cup softened coconut oil*
- ¼ cup creamy almond butter or sub other nut butter
- ½ cup maple syrup or liquid sweetener of choice
- ½ cup almond milk or sub other non-dairy milk
- 1 tsp vanilla extract
- 1 cup almond flour
- ⅓ cup cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup chocolate chips
- ¾ cup sliced almonds
Preheat the oven to 350 degrees. Line an 8×8 baking dish with parchment paper. To a small bowl, whisk together flax seed meal and water. Let sit for 5 minutes.
To a large bowl, using a handheld mixer cream together flax egg, softened coconut oil, almond butter, and maple syrup until creamy. With a wooden spoon or spatula, stir in almond milk and vanilla. Add almond flour, cocoa powder, baking powder and soda, and salt. Stir until a smooth, thick but pourable batter forms. Fold in ½ cup sliced almonds and chocolate chips.
Pour batter into prepared baking dish. Sprinkle with remaining ¼ cup sliced almonds. Bake for 35 min. Brownies should not jiggle and top should be firm to touch. Let sit for 15 min. before cutting into nine even portions.
*you shouldn’t have to microwave your coconut oil, if you let it sit out at room temp. to achieve a softer consistency
