Fudgy Almond Brownies

I assure you these brownies won’t disappoint. With a super fudgy and moist texture and perfect crunch from the almonds, it is the ultimate topping on your ice cream or to be eaten by itself.

They are super easy to make and contain simple, healthier ingredients, such as almond flour, almond butter and coconut oil.

Spice these bad boys up with 1/2 tsp of instant espresso powder and you’ll thank me later.

  • 1 tbsp flax seed meal
  • 2 tbsp water
  • ¼ cup softened coconut oil*
  • ¼ cup creamy almond butter or sub other nut butter
  • ½ cup maple syrup or liquid sweetener of choice
  • ½ cup almond milk or sub other non-dairy milk
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup chocolate chips
  • ¾ cup sliced almonds
  1. Preheat the oven to 350 degrees. Line an 8×8 baking dish with parchment paper. To a small bowl, whisk together flax seed meal and water. Let sit for 5 minutes.

  2. To a large bowl, using a handheld mixer cream together flax egg, softened coconut oil, almond butter, and maple syrup until creamy. With a wooden spoon or spatula, stir in almond milk and vanilla. Add almond flour, cocoa powder, baking powder and soda, and salt. Stir until a smooth, thick but pourable batter forms. Fold in ½ cup sliced almonds and chocolate chips.

  3. Pour batter into prepared baking dish. Sprinkle with remaining ¼ cup sliced almonds. Bake for 35 min. Brownies should not jiggle and top should be firm to touch. Let sit for 15 min. before cutting into nine even portions.

*you shouldn’t have to microwave your coconut oil, if you let it sit out at room temp. to achieve a softer consistency
