Fudgy Almond Brownies

Fudgy, melt-in-your-mouth almond brownies. This delectable chocolate treat is studded with sliced almonds and made with almond flour. The recipe is gluten-free, grain-free, and vegan.

Give me a fudgy brownie over a cakey brownie any day! These fudgy almond brownies are rich in flavor, and simple to make.

I assure you these brownies won’t disappoint. With a super fudgy and moist texture and perfect crunch from the almonds, it is the ultimate topping on your ice cream or dessert on its own.

This recipe is super easy to make and happens to be gluten-free!

Spice these bad boys up with 1/2 tsp of instant espresso powder and you’ll thank me later.

How to Make Fudgy Almond Brownies:

  1. Preheat the oven to 350°F degrees. Line an 8×8″ baking pan with parchment paper.
  2. In a large bowl, whisk together flax egg and coconut oil. Let sit for 5 minutes. Add almond butter, sugars, milk, and vanilla extract. Whisk well until creamy. Add almond flour, cocoa powder, baking powder and soda, and salt. Use a rubber spatula or wooden spoon to stir well until a thick batter almost dough forms. Fold in dark chocolate chunks.
  3. Press brownie dough into the prepared baking dish. Sprinkle over sliced almonds and optional, additional chopped dark chocolate. Bake for 28-30 minutes until center is slightly soft to touch but not underdone and sides start to pull away from baking dish. Cool in baking pan for 15 minutes before serving.

Is there a substitute for coconut oil?

I have not tested this recipe with another ingredient. I don’t think vegan butter would work the same way, but feel free to test at your own risk.

Where can I find dutch-processed cocoa powder? Can I use regular?

Dutch-processed cocoa powder can be found at most grocery stores or online. It provides a richer, more chocolatey flavor that I personally enjoy way more than traditional cocoa powder. However, if it is an unreasonable price and you can’t locate it then regular is fine.

The brownies are falling apart, did I do something wrong?

These brownies are fudgy, and I mean fudgy. They are softer and more delicate than your traditional brownies, so just be careful when cutting and serving them. It’s a beautiful mess, that’s for sure.

How do I store the brownies?

Store them in an airtight container at room temperature for up to 5 days.

  • 2 tbsp flax seed meal
  • ½ cup melted coconut oil
  • ½ cup creamy almond butter
  • ½ cup (107g) brown sugar
  • ¼ cup (56g) granulated sugar
  • ¼ cup non-dairy milk
  • 2 tsp vanilla extract
  • 1 cup (107g) almond flour
  • ¾ cup (68g) dutch-processed cocoa powder
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 3.5 oz chopped dark chocolate
  • cup sliced almonds
  • Flaky sea salt for topping

Recipe Notes

Substitutions: Any type of creamy nut butter can be substituted for the almond butter.
