Not going to lie, I eat pretty much the same thing for breakfast every morning ⎯a big bowl of oats or a couple pieces of toast with toppings. I am a simple gal…at least when it comes to my mornings. I love routine, so switching up my breakfast would take a miracle.

That’s when I present to you this granola.

Granola doesn’t just have to be poured into a bowl with milk or yogurt. It has SO much more potential than that.

My favorite ways to enjoy granola are:

Sprinkle on toast. Smother nut butter on toasted bread or english muffin, top with fruit of choice (blueberries, bananas, raspberries), sprinkle on granola, and a dash of cinnamon.

Top on a smoothie bowl. A thick smoothie bowl is not complete without a crunchy topping. Top your creamy smoothie with fresh fruit, seeds or a nut butter, and granola.

Make a granola bar. Double the amount of wet ingredients in this recipe (coconut oil, banana, maple syrup, almond butter, and vanilla) then press into a loaf pan. Refrigerate for an hour to set then cut into bars.

How to make Oatmeal Raisin Granola:

This recipe is easy and simple to make.

  1. Preheat the oven to 350F. Line a baking sheet with a silicone baking mat or parchment paper.
  2. In a large bowl, mash banana until smooth. Whisk in the melted coconut oil, maple syrup, almond butter, and vanilla. Add the oats, spices, salt, raisins, and pecans. Stir to combine until a wet mixture forms.
  3. Spread granola on to the prepared baking sheet. Bake for 22-25 minutes until golden brown, turning the pan half way.
  4. Cool for 10 minutes before transferring to an air tight glass jar or ziploc.

  • 1 medium, ripe banana
  • cup melted coconut oil
  • ¼ cup maple syrup
  • 2 tbsp creamy almond butter or sub other nut butter
  • 1 tsp vanilla extract
  • 2 cups rolled oats
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ cup raisins
  • ¼ cup chopped pecans
  • ¼ tsp salt
